Mexi-Stew
Had some left over shredded beef from last night's dinner so for lunch I whipped up Mexi-Stew!
It came out pretty good, so thought I would post my receipe.
1 can Pegresso Black Bean Soup
Enough Shredded Beef that it looks like you'll get a bite of it in each spoonful, but it doesn't look overloaded
A couple of handfuls of frozen corn
A few dashes of garlic powder so the top of the soup is pretty well covered but you can still see some brown under the white powder.
A couple dashes of crushed red pepper, add more until the stew leaves you with that funny tingle in your mouth.
Half a tomato, cut up into little salsa sized chunks.
A dash of seasoned pepper, just to give it a kick.
Mix it all up over high, but not boiling heat, stirring constantly (I dunno if you actually have to stir constantly, but I'm paranoid about burning things), until it looks like stew and tastes pretty good when you sample it.
In case you couldn't tell I learned how to cook from my grandma, who thought measuring things was for wimps.
